More Veggies Please! is the change I’ve been wanting. Having kids, it gets tricky to get them to eat their vegetables, not so much fruit, but yes to vegetables. I know my kids will eat them pretty well, but finding new ways of incorporating them into the meal makes it more fun. The recipes didn’t sound too complicated, and it was enjoyable to read about Dinki’s kids in each writeup before the recipe. From her cookbook, I tried out two muffin recipes and will try more of the recipes shortly.

First, I made the “Vanilla Yogurt Coffee Cake Muffins.” The hidden “good stuff” was vanilla yogurt and white beans. Following the recipe, you smash and mix the ingredients so that the beans are unnoticeable. The taste was yummy, especially with plenty of streusel topping. The recipe makes more than enough streusel for twelve regular-sized muffins. The second muffins were the “Double Chocolate Chip.” The hidden ingredients are spinach and avocado. I am amazed at how well hidden these ingredients are––my kids approved with two thumbs up!

Parents who want to increase their child(ren)’s vegetable intake without them realizing the change should use More Veggies Please!
