Vegan, at Times: 120+ Recipes for Every Day or Every So Often
I was absolutely thrilled to grab a copy of Jessica Seinfeld’s new cookbook, VEGAN, at Times. This describes me to a tee as I love experimenting with plant-based versions of my favorite recipes. In this cookbook, Jessica includes over one hundred and twenty vegan recipes that are not only healthy but easy to make. Her recipe for French Toast calls for a pureed banana mixture to dip the bread in instead of the conventional egg dip. Genius! her recipe for meat uses lentils and, to be honest, I really couldn’t tell in the pictures that it wasn’t ground hamburger. I am definitely trying it! The desserts in this cookbook are to die for and from what I could tell, Jessica just substitutes ingredients like butter, eggs, and milk with coconut oil, applesauce, and nut/plant-based milk and cheeses. She even states in the introduction of her cookbook that all of these ingredients should be very easy to get at your local grocery store or even Amazon. This book has so many fabulous recipes. From Mushroom Bolognese to Macaroni and Cheese to Ice Creams, Crumbles, and Cakes, there is something in this cookbook for everyone.
